Vegan Banana and Nut Bread
One bread - so many possibilities!
Celebrate autumn with this seasonal banana and nut bread. It is our favourite and a must bake for the colder autumnal nights. Today we are sharing this delicious recipe with you today so you can enjoy baking and eating this delicious bread at home. If you want to be totally healthy and replace the refined sugar, this recipe tastes great with coconut sugar. It also works great as a gluten-free version: Simply replace the flour with coconut flour et voilá - you have conjured up a delicious, gluten-free version in no time!
As you can see, the whole banana bread thing is flexible. Take the recipe as it is or use it as a basis for your creative ideas and bake your very own favourite banana bread.
What you need to add to your mixing bowl
Ingredients:
3 ripe bananas - medium size
100g coconut oil
75g raw cane sugar (alternatively coconut sugar)
1 teaspoon chia seeds
1 teaspoon pumpkin pie spice
1 teaspoon cardamom
1 teaspoon cinnamon
300g flour
200g ground almonds
1 teaspoon Baking powder
1 pinch of salt
50g walnuts
150ml plant-based milk
Preparation
Preheat the oven to approx. 180 (fan-assisted) degrees.
Mix the bananas, coconut oil, chia seeds, pumpkin pie spice, cardamom, and cinnamon together well. To do this, you can mash the bananas with a fork and work the spices into the banana pulp. Then add the flour, sugar, almonds, baking powder, salt as well as walnuts and plant-based milk by stirring the ingredients into the banana mixture with a wooden spoon.
The dough should have a creamy consistency. If you find that the batter has become too firm, add a little more of the plant-based milk. Now the dough is ready to be filled into a greased loaf pan and placed in the oven.
Place the Banana and Nut Bread into the oven for about 55-60 minutes. It is ready when a knife is inserted into the centre, when you pull it out it should come away clean.
TIP: Roast the walnuts in a pan for about 5 minutes without oil, stirring occasionally so that they don't burn.
